Elegant and refined, this cheese exhibits a light fluffiness, that coats the mouth but leaves the palate feeling refreshed.

A small amount of sweet fruit paste; berries or apricot work well.

Goat's cheese matches classically with a Sancerre (Sauvignon Blanc). However, it also pairs nicely with other white wines especially Albarino, or Pinot Gris or a french dry style Rose'.
