A washed rind that gets better as it ages, this camembert style cheese draws its inspired name from a resemblance to the distinct coppery tones that are found in the Ruahine Ranges that buffet the region where this cheese is made. With a luxurious creaminess, this cheese has an unctuous mouth feel, which is punctuated by the slight bitterness of the washed rind.
A small amount of a sweet fruit paste.
Wine / Beer match:
Washed rind cheeses have big often sharp flavours, pair with a bold red wine that won't be overshadowed by the flavours in the cheese; a fruity Syrah, or Bordeaux Blend.
