Doe Rei Mi
This goat's cheese is all about texture. A smooth creamy fudge like centre, is enveloped by a mild rind that exhibits the classic washed rind style savoury, umami notes. Washed with a special Brew Union ale brine, you can taste some of the hop notes throughout the rind, which creates a delicious contrast to the creamy goat's cheese.
A gold medal winner in the 2019 NZSCA cheese awards, this is a beautiful goat's milk cheese that is delicate to start with but grows in stature and flavour as it ages.
A small amount of a sweet fruit paste, especially darker stone fruits or berry pastes.
Wine / Beer match:
Naturally goes well with an ale still beer, or works well with a light savoury red wine, Pinot Noir, Cabernet Franc, or Merlot.
