Mushroom like in appearance, this minimum 14 day aged soft goat's cheese is covered with a distinctive ash that coats the wrinkles of the white rind. The diverse landscape of the cheese flows through in to its flavour profile, with distinctive goat clagginess that lines the mouth, and the tones of fauna and fungus permeating the cheese. This earthy delight encapsulates well the Kaikoura coast where mountains meet sea and create the perfect environment for rich flora and fauna to grow.
Comes in an approximately 250g cone.
A sweet paste; berries, or plums work well.
Wine / Beer match:
A robust Sauvignon Blanc pairing works well as does a good Albariño or slightly acidic Chardonnay.
