Aged goat's cheeses are few and far between in New Zealand, but this minimum 3 month old is a rare delight. Named after the family matriarch, the cheese exhibits a refined saltiness, whilst still retaining a slightly creamy, crumbly texture.
A citrus paste or condiment works well, as do sweeter berry notes or stone fruit pastes.
Wine / Beer match:
This cheese works incredibly well with a balanced Chardonnay that exhibits distinct minerality (Foxes Island Estate 2016 is one of our favourites). However, any white with a degree of salinity well balance nicely with this cheese. Strong tannic reds may overpower the more delicate flavours of this cheese.
