Premium Buffalo milk product producers at Clevedon Buffalo Co. engaged veteran cheesemakers Mercer Cheese to create this beautiful young Gouda. This 6-12 month aged Gouda has a softer paste and texture from standard cow milk Gouda and has a pronounced salinity instead of strong tang usually found in cow’s milk Gouda style cheeses. Buffalo milk is naturally high in A2 Beta Casein, and may be more palatable to those who suffer with lactose intolerance.
