The Danbo style of cheese has its origins in Denmark. Danbo exhibits similarities with Dutch Gouda and provides a creamy mouthful in a medium hard cheese. Ripened for 4 months and made with the milk of the Hohepa Cheese herd of short horn cows, this cheese is only starting to develop the tang of a traditional vintage Danbo or Gouda. Hohepa follow biodynamic principles on their farm based in the Hawkes Bay to provide lush pasture for their animals to deliver the best possible milk for their unique hand made cheeses.
