Clevedon Buffalo Co. Walnut Gouda

Premium Buffalo milk product producers at Clevedon Buffalo Co. engaged veteran cheesemakers Mercer Cheese to create this beautiful young Gouda, punctuated with slivers of Walnut and Fenugreek seed. This 6-12 month aged Gouda has a softer paste and texture from standard cow Gouda, and has a pronounced salinity instead of strong tang usually found in cow’s milk Gouda style cheeses. Buffalo milk is naturally high in A2 Beta Casein.

The Buffalo Gouda has a more delicate flavour profile than cow's milk Gouda, so pair with a lightly fruity paste. 

Wine / Beer match: 

Match with a sweeter white wine; Pinot Gris, Dry Riesling, Albarino, or unoaked Chardonnay or with a Pinot Noir to harmonise with the walnut and savoury notes of the Fenugreek seeds.
