A rare aged sheep's cheese, this superbly balanced and textured Manchego style cheese is aged for at least 3 months. 'Curado' meaning 'cured' in Spanish, is made with sheep's milk made from Canterbury and exhibits the distinctive sheep milk taste juxtaposed with hints of nuttiness and a caramel finish. A refined flavour that is not dominated by strong salinity. This a true tribute to the cheese makers of La Mancha, Spain, the home of Manchego.
A sweet quince or plum paste will go nicely with the delicate flavours of the Curado
Wine / Beer match:
Do as the Spanish do, and enjoy with a fruit forward Rioja, or a crisp white wine, Albarino', or a Pinot Gris on the dryer acidic side.
